Tonight we're experimenting a little:
- Chicken thighs
- Placed on top of lemon slices
- Fresh lemon juice over the top
- Honey over the top
- Fresh peaches put within
- Salt, pepper
- Cook at 375 degrees in the oven for approx. 30-40 minutes.

The chicken was good but a little light on flavor. We're going to give it another go with a few changes:
- Marinate the chicken thighs for a few hours with lemon and honey
- Don't cook the chicken in lemon juice. We think the lemon juice plus juice that came from chicken drowned it and zeroed out the other flavors (still cook on lemon slices, though)
- Cook longer at a lower temperature to let the flavors soak in
The peaches were delightful and the chicken was still quite juicy (with vague hints of lemon and honey). Hopefully next time we can pack it in more.
